Inspired by a boba shop called Happy Lemon. The 52 team was very intrigued by salted cream cheese drinks and wanted to reflect that in a cocktail format for the grand opening in 2018.

52R’s opening menu cocktail back in 2018. The team was focused on creating a cocktail for the opening with a nutty/earthy profile while still carrying an umami flavor. To achieve this, the cocktail uses one of East Asia’s most consumed mushrooms — shiitake.

Inspired by both Brazil’s national spirit and Shiba Japan’s specialty produce, which is pear. The name of this cocktail is derived from the first ship that took Japanese settlers to Brazil. It is floral forward with notes of citrus and the sweetness of fruit.
